Typically I'm a burger-and-fries kinda girl... But with bathing suit season here I'm trying to be better! Check out this delish dinner I made last night. SO HEALTHY it will make your head explode... in a good way!
Grilled Tofu with Spicy Mango Chutney & Stuffed Peppers
Start with the pepper... saute onions, mushrooms, garlic & fresh bail. Drizzle 1 tsp sesame oil, 1 tsp soy sauce, 1 tsp sweet chili sauce.
Add in some cooked brown rice & quinoa. When everything is cooked, mix in a sprinkle of shredded cheese (I used italian mix). Halve a bell pepper, clean out the insides and stuff! Bake at 400 degrees for 15 minutes
For the tofu, drizzle with a LITTLE soy sauce, then sprinkle with chili powder. I grilled mine on the George Foreman for about 10 minutes. For the spicy mango chutney... I cheated! I bought jarred mango chutney, then diced a jalapeno and stirred it in.
Add a glass of white wine (not healthy, I know, but whatever I'm not a saint!)
